Peanut Butter Dip

Today I’m going to share one of my family’s favorite snacks. We usually eat this as dessert because it is so sweet. The Mr. always says, “It tastes like the inside of a Butterfinger.” The first time I made it he thought I had actually scooped out the insides of Butterfinger candy bars. He is a HUGE fan of this special treat, and I’m telling you this because he’s NOT such a huge fan of peanut butter. So if you don’t like peanut butter, don’t dismiss this little recipe so quickly. It’s a must try.

Ingredients

peanut butter, brown sugar, (softened) cream/neufchatel cheese, toffee bits

Directions

Measure out 1 cup of packed brown sugar and pour into your bowl

Measure out 1 cup of peanut butter (a little more won’t hurt) and scoop into bowl.

The kind of peanut butter you use DOES matter.

The BEST is freshly ground honey roasted peanuts from HEB. You can taste the grits of sugar in it which is absolutely wonderful. And yes, I know we just added 1 cup of brown sugar, but the sugar on the honey roasted peanuts is coarser. And, come on, what’s a little more sugar? This is dessert after all. So if you are blessed to have an HEB, use that peanut butter (and think of me when you eat it).

If you are like me and do not have an HEB, JIF will work.  Or what we are currently using: White Chocolate Wonderful by Peanut Butter & Co. (peanut butter mixed with white chocolate) It can be found at both Wal-Mart and Target.

Whatever you do, DO NOT use some natural peanut butter straight from peanuts. It needs a little bit of sweetening.

on to the recipe……

Put the whole box of cream cheese and the WHOLE bag of toffee bits into your bowl.

Note: I’ve used Neufchatel cheese after a friend of mine told me that it was 1/3 less fat than cream cheese and tastes just like cream cheese, unlike the reduced fat cream cheese. Use what you want.


Mix

all

together.

Slice some apples.

And enjoy!

It’s great with other fruit as well. We just always default to apples. Fuji apples to be exact, but the sourness of Granny Smith apples pairs equally as well.

Helpful Hint: It is easier to mix the peanut butter and cream cheese together first, making sure they are combined evenly, and then add your other ingredients. I have made this so many times now that I simply throw everything in the bowl and mix and did not think about this when I was photographing.

One last thing. We make up lots of recipes around our house, and we always try to come up with fun names for them. “Peanut Butter Dip” doesn’t do this one justice. So any help naming our little treat, would be much appreciated!

    Now I want some of this wonderful dip. I was suprised I liked it so much since I’m really not a fan of peanut butter. But I could just eat the whole bowl.

    Btw, “Toffee Dip” is what I just instinctively wrote on the paper. and wouldn’t it be good with graham crackers?!
